Artist Nguyen Huu Thien An (26 years old, Ho Chi Minh City) won the highest prize in the Wedding Cake category at the Hong Kong International Culinary Classic 2025 (HKICC) competition, with the work "Hỷ sự hát bội" on May 16.

“Holding the medal in my hand, I feel proud and grateful. Grateful for not giving up. Proud for bringing a part of our national culture to the international arena,” An expressed after winning the competition.

Love for national culture is "carved" on cakes

Sharing with Tuoi Tre Online , An said that coming to this contest he chose to compete in the wedding cake category, and the chosen theme was inspired by the art of hát bội, so the work was called “Hỷ sự hát bội”.

The cake is shaped from fondant - a soft, flexible candy material derived from sugar, suitable for creating artistic shapes and covering cakes.

“Hỷ sự hát bội” ​​is made up of details with many layers of meaning. The drum that opens hát bội symbolizes the beginning of a new life. The red lotus conveys a message of faithful love. The middle layer shows the intersection of the past and present through modern paintings in a traditional frame. The hexagon symbolizes connection and harmony, the six sides represent the whole universe, like a wish for a perfect marriage.

The cake also symbolizes love that needs a balance between the old and the new, between two people who know how to listen and support each other.

An said the idea for the work came from his concern when witnessing many traditional art forms such as hát bội gradually disappearing.

He wants to connect national culture with modern baking art, not only to create a beautiful product, but also to honor and spread Vietnamese cultural values ​​in a more intimate way.

Not only this work, all the cakes that An brought to the international arena were carefully invested, not only in form but also in content and cultural significance. "Each work I bring is a story about Vietnamese culture," he said.

However, creating art from traditional cultural materials is not without its challenges. For An, the most difficult part is coming up with ideas because he has to ensure cultural accuracy, meet the competition criteria, and clearly convey the story through every detail.

Therefore, before each project, he begins with a serious research process, from finding documents on the Internet and social networks to consulting with cultural experts.

“I believe that careful research and meticulous practice will help the work not only be beautiful in form but also profound in content,” An affirmed.

Success when the world realizes: "Vietnam is here!"

Since 2019, when he was a member of the Bakery Club under the Saigon Professional Chefs Association, An began to enter professional competitions. The Vietnam Talented Bakery Competition was the first step, opening the journey to conquer major playgrounds in Malaysia, China, Vietnam and most recently Hong Kong.

Behind each award are sleepless nights, trials, errors and constant revisions. But what moved An the most was not the moment he received the medal, but when his international friends looked at his work and exclaimed: “This is Vietnam!”.

“That is recognition not only for me, but for the whole homeland of Vietnam,” An said emotionally.

Bringing Vietnamese culture to the world is a source of pride, but making international friends understand it is a big challenge. That is why An chose to focus on universal elements such as aesthetics and emotions. Because viewers can be attracted by the sophistication, harmonious composition and vivid colors of the work, even if they do not fully understand the cultural meaning. Emotion is the easiest way to connect people with each other.

In addition, he prioritizes choosing simple materials and expressions, and prepares short, easy-to-understand captions so that viewers and judges can easily grasp the message of the work.

Participating in international competitions, An cannot avoid the pressure of expenses. Because in addition to the times he received support from the Saigon Professional Chefs Association and sponsors, there were times when he had to manage all the expenses for the competition himself - from airfare, accommodation to raw materials and transportation of his work.

But with his love for his homeland and his desire to bring the Vietnamese language to the world, An has never thought of giving up. Besides his own efforts, the support of his family, friends and teammates is the strong spiritual support for him to continue his journey to conquer the award.

Currently, An teaches and creates cakes on request. He cherishes the idea of ​​opening a creative space dedicated to fondant art: a place to display works, exchange, share techniques and inspiration with people who share the same love for baking.

“I want to develop in-depth courses, combining modern techniques with traditional Vietnamese culture to preserve identity and help people make cakes that are both beautiful and have a personal touch,” An said.

For An, the most important thing is not the title. “Success is when you are truly satisfied knowing that you have put all your heart into it, and have nothing to regret. And most importantly, when the work can touch the hearts of viewers,” he shared.
